Fudgy Peppermint Bark Treats – New Recipe

Last weekend we attempted to make our own peppermint bark, and even though we made a few mistakes along the way... we ended up with this new family favorite! 

This project was quite the adventure! The white chocolate didn’t quite melt as expected, and we ended up improvising by adding a bunch of other ingredients to salvage it. The result was a fudge-like texture mixed with the firmness of the dark chocolate below, and everyone that’s tried it has asked for the recipe. So here it is! 
Fudgy Peppermint Bark
  • 2 packages of good quality semi-sweet chocolate (225g each)
  • 2 packages of good quality white chocolate (225g each)
  • ½ tsp peppermint extract 
  • 3 tsp butter 
  • ½ cup whole milk
  • 1 cup powdered sugar 

Toppings
  • ⅓ cup crushed candy canes, approx 6 - 8 regular sized candy canes.
    (Bulk Barn also sells pre-crushed if you want to save yourself this extra step.)
  • Fancy sprinkles 
Chop up the dark and white chocolate into small pieces and divide into separate pots. Over your double boiler, melt the dark chocolate first. Go slow, you don't want to burn it. Once your chocolate is fully melted pour onto a cookie sheet lined with parchment paper. Spread evenly to create an even layer of dark chocolate. Set into your freezer to firm up.

Next up is the white chocolate, melted over the double boiler. Once fully melted, add the peppermint extract and butter. Combine well, while keeping it over the heat. Remove from heat. Add the milk and combine. It's going to be quite runny now. Add in the powdered sugar slowly until you get the consistency of a thick icing (adjust the amount of milk or sugar as needed to achieve this texture).

Once well combined, spread this mixture over the dark chocolate base until its an even layer. Now you are ready to add the crushed candy and sprinkles. Press them into the top layer gently. 

Put the whole tray back into the freezer for 20 minutes to firm up. Once it’s solid, you can break it up by hand or use a knife to cut it into squares.

Store in your freezer if you like it extra firm like we do. This would also make the perfect homemade hostess gift!
