Recipe - Four Cheese Pâté with Crostini
This recipe is inspired by my favorite appetizer from the "Joey" restaurant chain – it was removed from their menu many years ago, and I just couldn't resist trying to recreate it!
Four Cheese Pâté with Toasted Baguette
- 1 - 8oz package of cream cheese cubed
- 1/2 cup parmesan cheese finely grated
- 1/2 cup aged cheddar cheese finely grated (I prefer Balderson's Cheddar)
- 1/2 cup aged gouda cheese finely grated
- 1/2 sour cream
- 1/2 tsp garlic powder (fresh is too over powering)
- Kosher salt - to taste
- Fresh cracked pepper - to taste
- Red pepper jelly (we use "Something Special" brand)
In a large bowl, use a hand mixer and combine all ingredients until you reach a smooth consistency. Add salt and pepper to your liking (taste often!). I like to add a little extra pepper to ours.
Baguette:
Thinly slice a store-bought baguette. Brush it with a little olive oil and sprinkle with salt and pepper. Lay pieces out on a lined baking sheet and broil them in the oven to lightly toast the tops to a golden brown.
Serve it with a red pepper jelly on the side.
