Recipe - Coconut Nest Macaroon

This super simple recipe is the perfect thing for you non-bakers to try! Trust me when I say your little ones will love making them with you almost as much as they will love eating them.

I am a huge fan of coconut macaroons and my mom always makes me the most delicious chocolate ones at christmas time. This was my first attempt at making them myself so we modified it a little and made them the perfect easter treat! 

Coconut Macaroon - Mini Egg Birds Nest


You will need: 

 

  • 2 packages of sweetened flaked coconuts (200g each)
  • 5 egg whites lightly whipped
  • 1 1/2 tbsp sugar 
  • 1 tsp salt 

 

For the topping: 

 

  • 1/2 cup of white chocolate chips 
  • 1 package of mini eggs or candy eggs of your choice

 

Directions: 


Preheat your oven to 300°F.

Coat your mini muffin pan with cooking spray and set aside.


In a large bowl add in eggs whites and lightly whisk, add in salt and sugar until well combined. Then add in both packages of coconut and mix well. Your mixture should be wet and sticky. 


Drop by spoonfuls into muffin pans and lightly press down using the back of your measuring spoon to create the nest shape. This is the fun part for the kids!


Bake for approx. 25 minutes or until the edges are lightly browned. Let cool for 5 - 10 minutes before removing from the pans.


Melt your white chocolate in the microwave on medium heat setting for 30 second increments until fully melted. Spoon a small amount of white chocolate into the centre of your cooled nests to act as glue for the eggs.  Drop a few candy eggs into the warm chocolate.                   


Let cool and enjoy!
