Recipe - Butterscotch Confetti Bars
Remember when the chicest desserts all contained marshmallows? Those were the days!
Butterscotch Confetti Bars
This is another classic recipe and while the ingredients may seem like a funny combo, they are so addicting. You’ve been warned!
- ¼ cup margarine
- ½ cup smooth peanut butter
- 1 cup butterscotch chips
- 4 cups of mini fruit marshmallows
Melt margarine and peanut butter in a large saucepan over low heat. When fully melted, stir in the butterscotch chips until melted. Set the mixture aside and allow to cool. This step is really important otherwise the marshmallows will melt and you won’t have the fun confetti look. Allow it too cool longer than you think. Stir occasionally so it stays smooth.
Once well cooled mix the marshmallows into the mixture one cup at a time until fully coated.
Press into 9 inch square pan laned with parchment paper. Refrigerate till set. Cut into bars and enjoy!
